I got some ideas:The remnants of the galactic empire want to build a new death star and the allience has to stop them. An rpg in the clone wars period.

how about the Star wars the old republic story? http://www.swtor.com/info/story/setting would be a good plot, a raging war between the sith empire and the remains of the old republic. I'd want to be a jedi padawan who escapes his masters killer (one of you out there) only to crash in korriban where he pretends to just be a normal boy until another sith master finds him using the force and makes him his apprentice. years later I become a sith warrior but the sith that killed my master draws near and recognizes me. I quickly take off on a spaceship to corusant and warn the jedi of an attack, they don't trust me to begin with but an old friend of mine sees me and persuade the others to trust me, despite the preparations the jedi temple falls and but most jedi (including me) manage to escape. now we're on a space ship going to an unnown planet in the outer rim. and the story starts there
How about another Mandalorian Crusade? Wiping out thousands of species that the Republic doesn't even know exist has GOT to be fun.
So are most science fiction species/groups. The human imagination can rarely be streched enough to create something truely new and unique. Most groups are either directly copied from another and slapped with different names or cobbled together from various groups' characteristics to make some semblence of sense. Its the same with the stories. There are only so many truely unique stories out there that cannot be boiled down to a handful of essencial details. In fact, one school of thought [though I am slightly skeptical about this one] is that there are only 7 unique stories in the history of human fiction and that all others are just adaptions of them. The point? My idea is no less ligitimate than any others and no more or less cliche than others. That and Mandalorians are a ton more fun than Jedi.
That is a little... pointless. The Mandalorians always win. There is a reason that you know Fett and, um, and... oh wait, you don't hear about any other major bounty hunter groups... thats because the Mandalorians always win.
Actually there were the famous "defects"... What about though unique bounty hunters? We all have hits on each other we don't know of. (Like everyone had someone on their hit list, but the other doesn't know who's after them.)

Everyone is a fraction of bounty hunters... Everyone has someone/ fraction leader they have to take out... Those people don't know they have hits on them... ...pretty much mafia style...
